LA RECETTE
For the shortbread dough
Mix together and knead the butter, flour, ground almonds, sugar and egg. Chill the dough in the refrigerator for an hour and a half.
For the syrup
Combine the white wine, agave syrup, grated ginger and half of the chopped mint leaves in a saucepan. Simmer for 1 minute on low heat and then let cool for 20 minutes
Assembly
Halve or quarter the strawberries and arrange them in small serving dishes. Pour the still-warm syrup over them and place the dishes in the refrigerator for one hour.
Roll out the shortbread dough to a thickness of 3mm. Cut out circles of dough, then cut a smaller circle in the center of half of them. Bake at 175°C for 15 to 20 minutes. Spread them with strawberry jam and dust with confectioners’ sugar.
Garnish with one or two whole strawberries and the rest of the mint leaves. Assemble the cookies separately.

Strawberries
Strawberries are low in sugar and low in calories but loaded with vitamins and fibre. With a high content of vitamin C, strawberries are a natural anti-fatigue and facilitate mental concentration.

How to choose your strawberries
Naturally, the best strawberries are those that you pick yourself from your garden or from a local producer, preferably in the cool hours of early morning, when the fruit is still firm and full of flavour.
If you can’t pick your own strawberries, the best ones are those bought at the local market, directly from the growers in the region, who picked them that morning.
The fruit must be beautiful bright red color, with a green. Its texture is medium-firm.
How to store them well
Avoid closed containers, the fruit needs to breathe. It is best not to pile them up and wash them only when serving them. They keep well in the refrigerator for 2-3 days.
To keep strawberries in the freezer, simply wash them well in ice water, drain them, and freeze them quickly in the coldest part of the freezer, preferably on a single layer without staking them on top of each other.
